We as people are familiar enough with the most commonly used symbols and images to let them speak for themselves. Using symbols can really highlight the personality of the deceased. Of course a simple image cannot capture every facet of a beloved and unique person, but it can be used to powerfully express a core aspect of who they were. 

Using specific symbols, for example religious imagery, can indicate that the deceased belonged to a specific profession or religious community.
